Mozzarella Stuffed Meatballs

After having the Pennette with Summer Squash and Ricotta and anticipating another vegetarian dish the following night, I caved in to the needs of my meat-eating husband and made some Mozzarella Stuffed Meatballs to accompany our next vegetarian-friendly meal.

 These meaty little balls were bursting with melted cheese, who could go wrong with that combination? Because the vegetarian dish that I was serving these meatballs with did not use a sauce, I browned the meatballs in a skillet and finished cooking them in the oven. They were a hit and are a great way to add meat to a vegetarian dish, if you should choose to do so.
