Pioneer Woman Springy Shells

In the mood to eat a bunch of fresh vegetables, I found the Pioneer Woman‘s recipe for Springy Shells, which uses asparagus, broccoli, peas, green onion, and zucchini. Upon reflection, this recipe seems to only include fresh green vegetables, so it’s a little discriminating on the wide spectrum of vegetables. But it’s still delicious and I don’t see why grated carrots, sliced mushrooms, or cubed eggplant couldn’t fit into this dish. Or chopped red peppers. Or corn! Corn would be great in this dish. The possibilities are endless!

¬†As the picture proves, I did in fact add carrots to this green dish. This dish is assembled of layers of pasta, ricotta and parmesan cheese, and vegetables. It’s very cheesy but the heavy dose of green vegetables makes you think that you’re eating something healthy. To accompany this vegetarian dish, I added Mozzarella Stuffed Meatballs for Devin. This is a great dish that can be made using whatever fresh or frozen vegetables you happen to have on hand.
