7 Layer Greek Dip

Happy Football! The thing about the Super Bowl is that I don’t know anything about football, I don’t usually know who is playing, and I don’t care who wins, but I enjoy the food and beer that goes with it. My friends have been hosting a cul-de-sac Super Bowl party/potluck for the past several years and one of the hosts homebrews and has his whole crew of homebrewers attend the party. Yes, I get to sample kegs and kegs of fine San Diego homebrew every February.

I usually make really ugly, but still delicious versions of Bakerella’s Oreo Truffle Footballs for the Super Bowl and I even bought all the ingredients last week. Unfortunately, with exams approaching, I started to run out of time, so I decided to forgo the time-consuming truffle footballs this year. Instead, I brought a Greek 7 Layer Dip, using premade ingredients.

Starting with a base of hummus, then tzatziki, diced cucumbers, diced tomatoes, diced red onion, feta cheese, and chopped kalamata olives, this dip has all the things that I love!  I doubled the recipe and I omitted the mint. I also seeded the tomatoes and peeled the cucumber. After cutting the vegetables, it’s just a matter of assembly, so it’s something that is quick to whip up. It was a delicious alternative to all the heavy and meaty dishes at the Super Bowl potluck.
