Nothing Bundt Cake

Continuing the celebration of my best friend’s birthday last year, her husband bought her a red velvet Nothing Bundt Cake. Red velvet is her favorite flavor and she recently discovered Nothing Bundt Cake through her coworkers. I have had few encounters with bundt cakes in my life and this was my first Nothing Bundt Cake.

Everything except for the candles were included as decorations with the cake purchase. I think it turned out pretty cute! The white frosting is Nothing Bundt Cake’s signature butter and cream cheese concoction and the center of the bundt cake was filled with it. It’s pretty rich frosting and I found out on their website that they can decorate their cakes with lighter drizzles of frosting, if you’re into that kind of thing (I am not).

Well, we all know that red velvet cake is a fanatical craze these days, with red velvet cakes and cupcakes filling bakery shelves and even expanding to red velvet ice cream, red velvet frozen yogurt, red velvet yogurt, red velvet whoopie pies, red velvet Pizookie at BJ’s, red velvet molten lava cake at Chili’s, and red velvet cheesecake at The Cheesecake Factory. Now that I have typed “velvet” so many times, it’s starting to look misspelled each time.

Anyways, so in preparing this post on Nothing Bundt Cake’s red velvet cake, I did some research on red velvet cakes and found out some interesting information. I was under the incorrect impression that the original red velvet cake derived its red color from the addition of beets to the cake batter.┬áSo what does red velvet cake have? It contains cocoa and actually closely resembles Devil’s food cake because it uses cocoa and oil. The oil makes it very moist. The original red velvet cake got its color from the addition of vinegar and buttermilk, which activated the red color in the cocoa. Today’s red velvet cakes use a lot, a LOT of red food coloring.

So how is the red velvet from Nothing Bundt Cake? It’s awesome. It is moist and the addition of chocolate chips throughout the cake were a nice surprise. The cream cheese is rich, but not sickly sweet.
