Deviled Dinosaur Eggs

I love eggs. Scrambled, fried, boiled, poached, quiched, omeletted (oh man, how I love omelettes), I love eggs! From my head down to my legs!

But I’m not such a big fan of dying eggs for Easter. I did it a couple of times using a kit when I was a child, but it just seemed quite bland and the colors were never right anyways.

That is until I came across Barefoot Kitchen Witch‘s post about dying Easter eggs. She got the idea of dying eggs in a fashion similar to Chinese tea eggs, which involves cracking (but not peeling off) the shell of hardboiled eggs, then placing the cracked egg into tea or in this case, dyes. The magic happens when the eggshells are peeled off:

 

 

 

It’s like a rainbow dinosaur pooped Easter eggs all over our house*!

 

 

 

Even the eggshell massacre was beautiful.

 

 

 

Of course, I had to devil some of these dinosaur Easter eggs. I mixed the egg yolks with mayonnaise, Greek yogurt, mustard, salt and pepper, filled the eggs with the yolk mixture using a Ziplock bag, then sprinkled paprika on top. What a delicious and colorful Easter! Thanks for the great idea, Barefoot Kitchen Witch!

*By house, I mean a plate in our tiny apartment kitchen.
